Did you just read that headline? OMG. It’s for real. I really did make something that was edible. Granted, it was my 3rd try (and 9th item) on making this one thing, but I finally got it right. I made pumpkin bread.
It wasn’t burnt.
It tasted heavenly.
I ate an entire loaf on my own.
My husband (J) and daughter (M) have eaten more than once piece, and didn’t cringe at the first bite!
I’m just as shocked as you are!
So here’s the recipe for the yummy goodness:
2 1/2 cups of flour
2tsp baking soda
1/2tsp ground cloves
1 large can of pumpkin (I used the cheap store brand)
3 cups sugar
1 cup oil
Mix all your dry ingredients in a large bowl. Add wet, then blend well. Grease WELL (I also added flour) 3 loaf pans, pour the batter into them (duh). Bake at 350 for an hour or until done. Let cool for 5 minutes and remove from pans.
Done for us means in 50 minutes, and if you go a sneeze over it, it will burn into real bricks which you can build a house out of! So unless you’re doing some MAJOR construction, I’d start keeping an eye on them at the 45 minute mark.
I’ve also chosen to freeze one of my loaves, so it will be fresh for Thanksgiving. Hopefully I won’t screw that up. 😉
